At Thanksgiving I created a recipe for Chewy Chocolatey Toffee Cookies. What was funny about this cookie, was they were too flat and boring to me. However, the people my husband works with request this specific cookie all the time, so funny!
I decided to change up the recipe, in hopes that the cookie would not look so flat, and boring. I also decided to of course include the ever wonderful Chobani Greek Yogurt. For this recipe I used one of the new flavors, Black Cherry, which is my FAVORITE!!!
Chobani actually sent me a sample of each of the new flavors, I love them!!!
Look at the cute lunchbox too, I could give this to my niece….but I love it too much! I have not found the new Champions Kids flavors in my local grocery store, which is very sad. The two flavors they have for the Champions is Very Berry, and Honey Nana. I am going to replace eggs with the Honey Nana in some Banana Bread. So excited to share the recipe with you soon!
The Cherry Quinoa cookie recipe is easy, and fun. It does not include butter or eggs, and still comes out fluffy. The dough is thick, I was worried it would be too runny.
I have a Quinoa Cookie recipe that I decided to introduce to the Greek Yogurt cookies. YUP, that was a wise choice on my part, they really did get along well.
The dough is my new favorite cookie dough to use, and is easy to accommodate to your favorite cookie recipe. I have used Vanilla Chobani Greek Yogurt, and made Chocolate Butterscotch cookies. If you use the Vanilla flavor, you do not need to use the 1 tsp of vanilla in the recipe. If you do not use quinoa and oatmeal, use 2 1/4 cups of flour.
Recipe:
Preheat oven to 350 degrees Fahrenheit
Bake cookie for about 8-10 minutes, depending on oven.
Make about 35-40 cookies, depending on size.
1 cup packed brown sugar
1/2 cup canola oil
1/4 cup pure cane sugar
1 cup Greek yogurt
1 tsp vanilla
1 1/4 cups flour
1/2 cup quinoa ground in blender
1/2 cup oatmeal ground in blender
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
2 cups cherry flavor craisins, or dried cherries
Directions:
Mix brown sugar, oil, pure cane sugar, Greek yogurt, vanilla together.
Next, in separate bowl, mix flour, quinoa, oatmeal, baking powder, baking soda, salt together. Slowly mix into wet mixture.
Mix in cherries, and if you choose 1/2 cup of nuts.
