Kahlua Oatmeal Butterscotch Cookies

Hello, Heeellllllooooo…..HELLO!!!!  Oh there you are!

Can you believe I only wrote one post last week?  That makes me sad….

I do have fun news to share though, and maybe a good excuse for my absence…

I am officially a freelance writer, I am soooo excited!!!!  I will be able to share more when the place launches in a few weeks.  Until then, well know I have been doing a happy dance since last Thursday.  My tootsies are starting to get tired.

Today I had fun making Kahlua Oatmeal Butterscotch Cookies, two different ways.  I wish I could take the credit for this lovely recipe, but I can not.  I was asked by a wonderful site if my readers would enjoy this recipe.  Well every time I mention the cookie, I get so many happy messages back.  I suspect that the answer is YES, to my wonderful readers enjoying this recipe.

I am getting all revved up for Easter!  Time for CafeTerraBlog to share holiday recipes earlier then normal, so you can plan your meals in advance.

Here is the original recipe as it was exactly shared to me:

Kahlua Oatmeal Butterscotch Cookies Recipe

Makes about: 4 Dozen Cookies
Prep Time: 25 Minutes

Ingredients:
3 Tablespoons Of Kahlua Coffee Liqueur
3/4 Cup Of Softened Butter
3/4 Cup Of Light Brown Sugar
1 1/4 Cups Of White All Purpose Baking Flour
1 Teaspoon Of Liquid Vanilla Extract
1 3/4 Cups Of Butterscotch Chips
3 Cups Of Uncooked Rolled Oats
1/2 Teaspoon Of Table Salt
3/4 Cup Of White Granulated Sugar
1 Teaspoon Of Baking Soda
1/2 Teaspoon Of Fresh Ground Cinnamon
2 Whole Eggs

Preparation Instructions:
1. First you will need to preheat your oven to 375°F or 190°C. (For my gas oven I had to turn the oven down to 350)

2. In a large mixing bowl thoroughly beat together the white granulated sugar, softened butter, and light brown sugar.

3. Thoroughly stir into your cookie batter the whole eggs, liquid vanilla extract, and Kahlua coffee liqueur.

4. Using a separate mixing bowl sift together the white baking flour, baking soda, fresh ground cinnamon, and table salt.

5. Gradually stir the sifted ingredients into the butter base cookie batter.

6. Stir the uncooked rolled oats and butterscotch chips into your batter.

7. Drop large scoops of cookie dough on to an ungreased cookie sheet.

8. Bake each cookie batch for 10 minutes or until the cookies are golden brown. (cooking time will depend on oven, I ended up cookie them for 8 1/2 minutes.)

9. Let the cookies cool on a wire wrack before serving them.

Now as always, I like to challenge myself.  Soooo, I tried this recipe with vanilla Greek yogurt.  Using the Greek yogurt, instead of butter and eggs, completely changed the composition of the cookie.  You really can not compare them in texture, or taste, they are that different.  Both variations were delicious!

Ingredients:
3 Tablespoons Of Kahlua Coffee Liqueur
1 3/4 Cup Vanilla Greek Yogurt
3/4 Cup Of Light Brown Sugar
1 1/4 Cups Of White All Purpose Baking Flour
1 3/4 Cups Of Butterscotch Chips
3 Cups Of Uncooked Rolled Oats
1/2 Teaspoon Of Table Salt
3/4 Cup Of White Granulated Sugar
1 Teaspoon Of Baking Soda
1 Teaspoon Of Fresh Ground Cinnamon

*So the changes I made were – for a large egg you can substitute 1/2 cup of yogurt.  The recipe calls for 2 eggs, so we substitute 1 cup of yogurt.  For butter you can just exchange the butter for the yogurt.  If you are lactose intolerant, you can use applesauce, or oil.  The yogurt helps keep the cookie fluffy, the applesauce can sometimes make the cookie flat.  And the oil can make the cookie….well, oily…sounds silly to say, but it is true.

*I did add a little more cinnamon for fun, I love love cinnamon!

*To bake the cookie was the interesting part.  They took longer to bake, almost 12-15 minutes.  So you could turn the oven back up to 375 maybe.  The time will be different for everyone, I have a gas oven.

    Congratulations, wishing you all the best! I think I will try the recipe with the butter, but I’m sure the yogurt version is just as good, anything with Kahlua has to be great!
