I have sooooo much to celebrate today!!! What a perfect day to have a virtual Pie Party!
It is a joke in my family that I will be late for my own funeral….seriously I am late for everything…BUT I have PIE!!!!
So when there is a party, I really feel something, I mean anything should be celebrated during a party. But what to celebrate today? Then I was on the phone with my best friend in the whole wide world, I love her lots!!!! AND I finally realized what we are celebrating tonight!
Well Amy and Jared got engaged last week!
Amy graduates from Nursing school next week!
AND I have not talked to her much in the last year with school, she said she is back, YAY!!!!

The pie of choice? How about….
Almond Melon Meringue
1 medium cantaloup, seeded and diced
1 cup sugar
2 1/2 tsp xanthan gum
3 egg yolks
4 Tbsps butter melted
1 tsp almond extract
1/8 tsp salt
For crust:
1 1/2 cups almond flour
4 Tbsps butter melted
For meringue:
3 egg whites
1/4 cup sugar
1/2 tsp almond extract
Directions:
Preheat oven to 350 degree Fahrenheit
In blender or food processor, puree melon. Combine pureed melon, sugar, xanthan gum, egg yolks, salt, almond extract, and melted butter together in mixing bowl. Mix ingredients with electric mixer.
Mix together almond flour and melted butter, place in pie pan.
Pour melon mixture in pie pan. Place pan on sheet pan, just in case mixture spills over sides.
Bake for about 45-55 minutes. Because I used xanthan gum, and only 2 1/2 tsps, pie does not completely set up, will be slightly soft. You can use 3 Tbsps of cornstarch, or more xanthan gum.
For meringue, mix egg whites in mixer until soft peaks form. Slowly add sugar and almond extract. Pour over cooked pie evenly. Bake pie for another 15 minutes.
Let cool, then refrigerate to let pie set. Enjoy!
