The weekend is over, but it was perfect! Ending a weekend cooking, AND baking, makes for a happy baker!
This Monday we are making a muffin recipe from a chef I adore. I believe I started watching Nigella Lawson in the beginning of my FoodNetwork
I love watching FoodNetwork personalities that dance when they enjoy their dishes! I believe I let out my little secret weeks ago about my dancing when food is WAY too good! Food should be celebrated, so why not dance a little too right?
Well let’s get this party started!!!
Who wants Double Chocolate Coffee Muffins?
Double Chocolate Coffee Muffins – (Recipe adapted)
1 1/2 cups flour
2 1/4 tsp baking powder
1/2 tsp baking soda
2 Tbsp cocoa powder
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup chocolate chips
1/2 cup half and half
1/2 cup coffee or espresso
1/4 cup canola oil
1 large egg
1 tsp vanilla extract
Preheat oven to 350 degree Fahrenheit
In medium mixing bowl – mix half and half, coffee, canola oil, egg, both sugars, and vanilla extract together with a whisk.
In separate bowl, sift flour, then add baking powder, baking soda, and cocoa powder together.
Add dry ingredients to the wet ingredients. Do not over mix the batter. Chop Chocolate chips finely, and add to batter.
In muffin pan, add muffin cups, fill muffin cups 3/4 full.
Bake for about 20 minutes depending on oven.
Let cool. Enjoy!
