My Serendipity Muffin

Time to start another week!  Do you realize it is only about four months until Christmas day?  Four months will feel like four weeks with the way time flies by.

We actually have a tree in our backyard that has changed colors, and the leaves are falling off the tree.  It is not time for Fall just yet, but that tree is apparently ready for Fall to be here.

I have to agree with that beautiful tree, I am ready for cool days too.  My puppy and I enjoy a beautiful afternoon walk together, but lately we have to go late with the crazy heat.  “Soon” I have to tell her, “soon” we will enjoy a long, cool, relaxing walk together!

Well Monday is when the Muffin Monday fun happens….but not for me this week….

Yeah, my muffin turned into crumble….DELICIOUS crumble though!

I am a baker who always has to tweak, or change something, I can’t just leave well enough alone.  So I was having fun tweaking this fun recipe that BakerStreet gave me….and well it backfired on me.  As a baker, we all know this happens, that is the fun of baking!  I call every recipe I make a science project!

So I took the Snicker Peanut Butter muffin recipe, and made it into  Snicker Chocolate muffin/crumble recipe.  Another fact about me, not only am I not a big chocolate lover….I am also not a big peanut butter lover….yeah I know, I know, I am weird!  BUT if I have to choose between the two, I always choose chocolate.

I definitely was not going to waste this precious treat!  I called it a ‘happy accident’, or I love what my husband called it, “Serendipity Muffin!”

Snicker Chocolate Serendipity Crumble Recipe

1 2/3 cup flour, sifted

1 cup sugar

1 1/2 Tbsp baking powder

1 tsp baking soda

4 Tbsp cocoa

1/4 cup salted butter, melted

1 large egg, beaten

1/4 cup oil

1 cup almond milk

1/2 tsp vanilla

6 miniature snickers bars, chopped finely

Directions –

Preheat oven to 350 degrees Fahrenheit

In large bowl mix together sugar, melted butter, egg, oil, milk, and vanilla.

In medium bowl mix together flour, baking powder, baking soda, and cocoa.  Add dry ingredients to wet ingredients.  Add chopped snickers bars.  Do not over mix batter.

{Note – I put in muffin pan, thinking I would have muffins….and baked for about 25 minutes….}

So add batter to greased 9 x 9 baking pan.  Bake for about 25-30 minutes.  If stays together BONUS!  But if breaks apart, just crumble, and make into a parfait dessert.

To assemble parfait – Add generous layer of crumble to bottom of cup or bowl, next your favorite Chobani Greek Yogurt (I used Black Cherry flavor), then some fresh fruit, continue layers to height of your bowl or cup you have….devour as we did in my home!!!

I love “happy accidents”!

  • You’re a genius!  Love how you didn’t let a muffin accident deter you from making a fabulous dessert!  Your neighborhood photo is so pretty.  Although I’m very happy to be back in San Diego close to my family, I do miss the time when my kids were young and we spent a year and a half in Falls Church , Virginia.  Fall was definitely my favorite time of the year, and I have some great shots of the kids frolicking in the the fallen leaves.  Oh, and you’re scaring me by saying Christmas is only 4 months away-yikes!!!

    Serendipity! I love it! This definitely sounds like a happy accident to me, and I love that you made it with chocolate instead of PB (as much as I love PB).   • I love Christmas & I love this time of year as we get closer to the holidays. This year hasn’t gone terribly fast, which is good but I am anxious to start decorating for fall & then winter. After participating in Muffin Monday I can tell you it’s addicting & I’ll probably start baking real soon, and I’m keeping this recipe just for the occasion.
