Perfect way to celebrate a holiday weekend? Nachos!!!!
I love nachos! I love grilling! Why not combine the two? Last week I found a grilled nachos recipe, and of course shared the fun recipe with my grill master (my hubby!) We decided to take the idea to another level. My cute husband got so excited, and said to me on Sunday….{now just imagine extreme excitement here}….”Grilled Mediterranean Nachos!” AND we have venison in the freezer, a perfect compliment to any nacho dish.
I decided to bake some corn tortillas with sea salt and True Lime. My cousin Meggie gave me the delicious idea!
I baked them at 350 degrees fahrenheit for about 15-20 minutes.
We had fun with flavors, but nothing extreme. Just lovely, mellow flavors!
My version of Tzatziki Sauce -
1 1/2 cups of Chobani Greek Yogurt
2 medium cucumbers
1 Tbsp Dill (add a little at time to taste)
Salt and Pepper to taste
Directions –
Puree cucumber in blender, you may want to drain some of water off with strainer. Mix cucumber, Greek yogurt, dill, salt and pepper. Chill for hour to let sauce sit up.
To assemble these delicious little things…
If you remember, I grew up enjoying venison. I ate it in pretty much anything. Last year we had fun discovering cutting the venison chops in thin slices, and grilling on each side for about two minutes each. It is a very quick process, so don’t walk away from the grill….tough venison is not fun!
The next element to this delicious dinner, goat cheese! Yes, YUM! We took goat cheese, and mixed with 1 tablespoon of Greek oregano, and about 1/4 teaspoon garlic powder.
Take a layer of chips, with goat cheese, chopped tomatoes, chopped scallions, and venison. Then do another amazing layer….YES two, OH MY!!!
Then devour….serious happiness for two days…actually he is still talking about how much he enjoyed this dinner!
Now for the fun news! I may be a busy baker in the coming months….guess what?
