Banana Bread Cupcakes – For #NellysBigDay

“And …I said YESSSSS!”

It happened one November midnight, in Twitterverse, we saw this tweet from our dear Nelly @nella22 .  Without missing a beat, we all knew Nelly had “said YES” to her beloved “M,” as she sweetly calls Brian Murray, her fiancé.

So here we are, Nelly dear,  your friends in the food world, wishing you and Brian, all the best.   And with our wishes, a simple recipe with an easy formula for a life of bliss, rich with EVERYTHING in it!

BLOGGERS RECIPE FOR NELLY ‘S WEDDED BLISS:
Mix together: A lot of Love, Patience, Perseverance, Respect, Courage, Strength, Trust, Kindness, Honesty, Compromise & Great Sex.

Stir in : Equal Parts of Love, Support, Faith, Fidelity, Hope, Validation, Friendship, Forgiveness, Communication.

Cook over slow simmer for the rest of your life. Dot daily with a Sense of Humor.

Leave out the nagging, sarcasm, skepticism, doubts and stubbornness.

Serving Suggestions: Best prepared daily.  Serve with flourish because Married Life is a FEAST.  Live it with flavor, spice it with unconditional love, enjoy its richness.

Recipe Notes: Some ingredients won’t always be fresh or available.  Or the heat may flare up and the anger spills over. Simmer down and douse the flames with all the LOVE you can throw in.

Nelly,  you are someone I truly adore, and admire.  Your smile, spirit, and love for life, honestly makes Murray the luckiest man alive!

I am so excited to be here at your Virtual Wedding Shower with an amazing group of people!  What better way to celebrate a special day, than with a banana recipe?  I thought about adding bacon, avocado, and maybe a wee bit of sriracha….but decided against it….maybe next time!

After almost 15 years of marriage, I have one piece of advice to give.  Always communicate, when your angry, sad, happy, lost for words, no matter what.  Marriage is a team, it is 50/50, he is your life long partner, the one you can communicate with, with all your heart.

After 17 years with my partner, I still wake up every morning thanking my lucky stars for having a big mouth, and talking before thinking….AND for having a slight hearing impairment…  It is a funny story I will have to share with you sometime, but with those three things, I am with my angel, my soulmate!

Banana Bread Cupcakes

Delicious, moist cupcake, topped with a creamy frosting!

Ingredients

1 1/2 cup pastry flour (we use at restaurant, you can use all purpose flour)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
3/4 cup sugar
1/4 cup plain Chobani Greek Yogurt
1/2 teaspoons vanilla extract
2 large eggs
1 1/2 cups bananas, mashed
Vanilla Cream Cheese Frosting – Recipe by Nicole
8 oz cream cheese, softened
3-4 cups powdered sugar
1 packet of vanilla sugar (vanilla sugar will not turn frosting brown…)
2-3 Tbsp of milk (may not need, add after strawberries)
1-2 strawberries mashed well

Instructions

Preheat the oven to 350 degrees F. Line 1 (12-cup) muffin pan with paper cupcake liners.

In a medium bowl, combine the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, cream butter and sugar with electric mixer. Add Greek yogurt and vanilla extract. Slowly beat in the eggs, 1 at a time. Incorporate the dry mixture and wet mixtures together until thoroughly combined. Add mashed bananas (with this batter it is okay to mix well.) Using an ice cream scoop, fill each cupcake liner 3/4 way full. Bake in the preheated oven until the tops turn golden-brown and when a toothpick inserted, comes out clean, about 20 minutes depending on oven. Remove the cupcakes from the oven to a wire rack and let cool before frosting.

Frosting:

With electric mixer – mix cream cheese with powdered sugar, and vanilla sugar, mix well. Mix in mashed strawberries, if still too thick add one tablespoon at a time of milk. The strawberries will give the frosting a beautiful pink color.

You can put frosting on with a knife, decorating press, or a pastry bag (the strawberries may get stuck in pastry bag.)
