Blue Cheese Blitz Dip

How about short and sweet today?  I know everyone is sooooo ready for Super Bowl to be here, and let the celebrations begin.  Here is one last fun appetizer idea to add to the mix  (AND there is some bacon love in it!)

When my hubby, AKA “The Dip Chef,” made this last weekend…..well it definitely did not last long!  This dip is a perfect compliment with veggies, or these rosemary crackers you see here in the picture.  I did have to use some Chobani Greek Yogurt, a dip just wouldn’t be perfect without that happy addition!

Blue Cheese Blitz Dip

Total time: 1 hour 10 mins
Serves: 12
A dip for any season, especially football season!
Ingredients
  • 16 oz plain Chobani Greek Yogurt
  • 16 oz mayonnaise
  • 1 pound of bacon, extra crispy
  • 4 oz blue cheese crumble
  • 3 whole bulbs of garlic, roasted
Directions
  1. Preheat oven to 375.
  2. If you have a garlic roaster, cut off top of bulb, place in roaster, and bake for one hour. If you do not have a roaster, cut off top of bulb, and wrap bulb in foil, and place on rack, bake for one hour. Once it is ready, squeeze sides of bulb, and push out garlic. It should be very soft.
  3. Cook bacon, make sure it is extra crispy. Once cooled, crumble pieces of bacon.
  4. In medium bowl, mix together Greek yogurt, mayonnaise, bacon crumbles, blue cheese crumbles, and roasted garlic.
  5. Let chill for a few hours before serving, or for best results chill overnight to let flavors come together completely.
  6. Enjoy!

    I’m a blue cheese lover to the 100th degree, but with bacon and roasted garlic??  I have to run out and get the ingredients for this now!  Thank god for 24 hour markets!  Your hubs is a genius!  Looks amazing!  OH, Tuki is a cutie! :) xo

    Yum!!  My only problem with roasted garlic is that I never wait for it to cool and end up burning my fingers.  I know I should use a cloth but then I’d have to wash the darned thing.  I must hurry up and learn patience.  :)
