Do you have those days where all you crave is bread? There are way too many days like that for me. Bread is delicious. Yeast is wonderful. AND all the wonderful ways you can work with yeast is well…fun!
When I was a kid, I remember my mom would tell me about her first experience with making bread. She said that it made a good door stop….which I can only imagine would rock as a door stop honestly. BUT I was a bit leery of working with yeast after that, I wasn’t for sure where to even start. Thank you to Nelly from Cooking with Books, she is the one that helped me let go of that fear.
That fear is soooooo gone, and this last weekend I was brave enough to create a fun new recipe! AND it turned out, YAY!!!
One of my first really fun experiences with yeast was when I made delicious Homemade English Muffins! Then having the chance to share my Yeasted Meringue Coffee Cake with my grandparents, aunt, and uncle was the perfect way to devour that cake! BUT the best experience with yeast has to be when I made New York Style Bagels, a true adventure, and soooo delicious! I still have Croissants on my kitchen bucket list, and will for sure be making them some time VERY soon!
Now mixing my love of dough, yeast, bread, AND coffee, sounds perfect to me! After my fun with the Coffee Pumpkin Bundt Cake, baking with coffee is my new love!
Now for the fun! Who is ready to make some Chocolate Coffee Pull-Apart Bread with me? With PLATINUM Red Star Yeast, it is simple to use, AND so forgiving it takes the intimidation out of baking with yeast! With PLATINUM, my love of baking has grown even stronger!
After letting the dough rise for almost two hours. PLATINUM decreases the the risk of the dough collapsing after proofing and during baking!
Flour surface and roll out dough.
Spread out the buttery coffee cinnamon layer on dough.
Cut dough into squares, and stack on top of each other.
Stack together and place in bread loaf pan.
Coffee addicts dream!
Preheat oven to 350 degrees Fahrenheit. Spray loaf pan with cooking spray.
In medium bowl, mix together 2 cups flour, yeast, sugar, sweetened cocoa, and salt. Sit aside.
Whisk together eggs in small bowl. Sit aside.
In small sauce pot, on medium-low heat, add half & half, prepared coffee, and butter. Once heated, take off heat, add vanilla extract, and almond extract, let cool to 115 - 125 degrees Fahrenheit.
Pour milk mixture in flour mixture, mix well with spatula, the dough will be sticky. Add whisked eggs to dough, mix well, add remaining 1/2 cup flour, and continue mixing well. The dough is slightly sticky.
In medium bowl, add about 2-3 Tbsps of canola oil and cover dough with oil, cover dough with wet towel and sit in warm area.
Let dough rise for two hours, and double in size.
In small bowl, mix together softened butter, coffee grounds, cinnamon, and sugar.
On floured surface, roll out dough, spread out filling on dough, cut dough in three large strips, then cut dough into squares. Stack squares on top of each other, and stack upright in bread loaf pan.
Bake bread for 45-50 minutes, depending on oven. To check if dough is cooked through completely, inside of dough should be at least 200 degrees Fahrenheit.
