Boozy Banana Walnut Muffins {with Banana Chobani Greek Yogurt!}

You ask, and I shall deliver!  Here is one shot of my fun new kitchen.  We used to have a dreary black counter top, we called it a black pit.  We didn’t realize how dreary it was until we got our new counter top!  My kitchen is tiny, just a galley kitchen, so it needed some love for sure!  I look forward to cooking in that pretty little thing now!  The second picture shows what the color of my new counter top truly is…..AND I love it!

Now time for some boozy lovin’….or more specific, boozy muffin love!  Do you remember my Hummingbird Cake I made a few weeks ago with Banana Chobani?  I still had a few containers of Banana Chobani Greek Yogurt left, so instead of wasting them.  I made muffins!  Sounds perfect right?

Thank you to Chobani for always sharing your amazing yogurt!   My new late night snack is Chobani, I just love it so much!  AND I am excited to try the Chobani bites, the Chobani flip, and the new Chobani Champions….so much Chobani love happen lately!

Boozy Banana Walnut Muffins {with Banana Chobani Greek Yogurt!}

I am the worst at making a wonderful crumble top to my muffins.  Most of the time the crumble I make falls into the center of the muffin while cooking.  Or I add too much butter in my crumble recipe, and make this buttery happiness on the top of my muffin.  Now I know buttery happiness is TOTALLY okay!  I just wish I could get a true crumble top right someday…….someday it will happen!!!

Boozy Banana Walnut Muffin {with Banana Chobani Greek Yogurt!}

Boozy Banana Walnut Muffins

Ingredients

1 cup sugar
1 tsp vanilla
1 (6oz) container banana Chobani Greek Yogurt
1 medium banana, mashed
2 large eggs
1/3 cup dark rum
1 1/2 cup all purpose flour
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp baking soda
1 tsp salt
1/2 cup walnuts, chopped
For buttery topping:
1 cup salted cold butter, cubed
2/3 cup all-purpose flour
2/3 cup sugar
1 tsp cinnamon

Instructions

Preheat oven to 350 degrees Fahrenheit. Spray large muffin pan with cooking spray.

In medium bowl, mix together sugar, Greek yogurt, vanilla, mashed banana, eggs, and rum.

In small bowl, mix together flour, cinnamon, nutmeg, baking soda, salt, and walnuts.

In small bowl, mix cold butter, flour, sugar, and cinnamon together until crumbled.

Mix together wet and dry ingredients. Fill muffin cups 3/4 full, top muffins with a generous portion of crumble. Bake for 20-25 minutes depending on oven, (I used the large muffin, adjust time if you use a smaller pan.)

The muffins are simple, yet delicious.  The first taste that falls on your tongue is rum, followed by banana love all the way!  Hubby tried them, and said, if you didn’t tell him there was rum in the muffins, he would never have guessed.  So don’t be turned away by the boozy love, the rum gives the muffins a lovely flavor all it’s own!

    Your new kitchen looks great! It’s amazing what a color change can do to brighten up a room. We moved to our house abut 4 years ago, and the kitchen had dark brown walls. Attractive, but so dark! We painted them white and it’s like a new kitchen. Anyway, great looking muffin recipe. I eat Greek yogurt a lot, but I don’t think I’ve ever tried Chobani – probably ought to give it a try. 😉 Thanks for this.

    Delicious! Made these with bourbon (no rum on hand) and plain Greek yogurt with an extra half banana to compensate for the flavor. I did cut the topping in half and still had plenty. This is my new banana muffin recipe!
