Guinness Stout Cake with Guinness Buttercream Frosting

Last week was a long week for hubby, my babies, AND me.  This week is back to normal….welllllll, as normal as normal can get in my world!  My hubby’s birthday was in the middle of that long week.  When your birthday starts in the middle of a week, you really have to celebrate it big time when the weekend hits.  How is this for BIG TIME???

Even though I had the wonderful opportunity to work as a Pastry Chef at a local cafe here in Charlotte.  I still never thought of myself as a cake baker….until now!!!  After developing this recipe, loving the silky batter, and celebrating the velvety texture of the cooked cake……I have arrived in the cake baking world officially!!!  Now to just work on decorating those gorgeous cakes.  BUT let’s take one baby step at a time okay?

Now this baker would not finalize any sweet treat without her favorite Greek yogurt!  I finally found the new Coffee Chocolate Chunk Chobani Greek Yogurt Bites.  To make this cake even chocolatier, adding chocolate Greek yogurt was a perfect addition!

Someone asked me about my many boozy posts I have been sharing.  First there was Rosemary Cheddar Beer Biscuits.  Then we enjoyed some Boozy Banana Walnut Muffins.  Now let’s devour some Guinness lovin’ cake made with LOTS of love!  I think I just love baking, cooking, and well of course drinking booze….who doesn’t though?

Now I know I promised you another St. Patrick’s Day post, but well that just was not going to happen….there is always next year!  This recipe had a St. Patrick’s Day love to it, but honestly we just LOVE Guinness all year long.  Guinness is actually my favorite beer!!!

We shared the cake with our dear friends, what better way to celebrate a birthday, then with friends!!  Everyone enjoyed the cake, shared lovely words about how good it was, and then my friend went for a second slice!!!  That sealed the deal, this cake is a winner in our book!!

Ingredients

2 cups Guinness Stout Beer
1 cup (2 sticks) melted unsalted butter
2 tsp baking soda
2 tsp baking powder
1 tsp salt
3 eggs
1 1/2 cups unsweetened cocoa, sifted
2 cups Coffee Chocolate Chunk Chobani Greek Yogurt
2 1/2 cups sugar
3 cups all purpose flour
For Guinness Buttercream Frosting
3 sticks (1 1/2 cups) unsalted butter, softened
1 (3.5oz) Coffee Chocolate Chunk Chobani Greek Yogurt
3-4 cups powdered sugar
3-4 Tbsp Guinness

Instructions

Preheat oven to 350 degrees Fahrenheit. Butter three 9 inch round cake pans.

In large bowl, whisk together Guinness, eggs, Greek yogurt, and sugar.

In small bowl, mix together baking soda, baking powder, salt, sifted cocoa, and flour.

Mix wet and dry ingredients together slowly.

Melt 1 cup of butter, whisk in melted butter to batter until silky smooth. Use a measuring cup and evening pour batter into each buttered cake pan.

Bake for 25 to 30 minutes depending on oven.

Hubby had a fun birthday fest!  He said it was quiet, nice, and good, just the way he wanted it!  Quiet birthdays are pretty fantastic for sure, throw in cake and you have a ROCKIN’ birthday!!

  • That is one delicious looking cake, and your hubby is one lucky guy! After going gluten-free, Guiness is the only beer I have mourned. I was never a huge beer drinker, but occasionally loved a Guiness-the best one I had was in Ireland :-). If you ever want to make me a birthday cake Terra, I'd love a German Chocolate Cake!     I can drink Guinness, but I haven't found a sweet nor a savory dish that uses that I didn't love! This cake looks SO moist and SO delicious! I would definitely be eating dessert first at this meal.
