It has been said many many times, but I will mention it again, I love food blogs, and I love food bloggers! I have been following Kita from Pass the Sushi since I started blogging three years ago. Crazy how time flies right? She and I have a love for venison, so I instantly fell in love with her wonderful site! So when I found out she started a group called Pass the Cookbook Club, I immediately wanted to join. With the many cookbooks we food addicts collect, it made sense to share recipes from all those many beautiful books! Each month we will share a recipe from a specific cookbook, and adapt it, and make it our own if we choose!
Since Cinco De Mayo is only days away, the recipes chosen had a fun Mexican flare. The recipe I chose to adapt was Shrimp and Mango Quesadilla from The Picky Palette cookbook. Now hubby has this thing about fruit touching his savory dishes….call him crazy….BUT I just tell him he is missing out!!! So we decided shrimp and veggie quesadilla would be perfect!
Now I am not for sure if this is normal or not….but we do really own four different grills. We have a propane grill, that was our first big grill, and our baby. Then last year hubby a.k.a. grill master wanted to explore wood-smoking meat. So we bought a direct smoker, which can also be a charcoal grill. Then as my grill master continued to grow in his craft, he said we needed an off-set smoker….”needed” being the key word of course. Then he started watching BBQ Addict with Bobby Flay on Food Network…..AND we apparently “needed” a La Caja China. Now this is where I will probably lose you right? BUT that Cuban roasting box is the best purchase yet……until we buy a Parrilla Argentine…..that will rock my world!!! We may need a bigger back yard soon…just sayin’ 🙂
So this delicious recipe for shrimp and veggie quesadilla had to be grilled, it just had to be of course. The ingredients we chose for the recipe were inspired by a vegetarian dish at a local Mexican restaurant by our house. Actually I may be getting that dish this Friday with my sweet friend Andi from My Beautiful Adventures…with a margarita maybe!
There is nothing fancy about this recipe, but sometimes simple is more fun! Actually, I believe that is what K.I.S. stands for, keep it simple!

We used our propane grill for this recipe. You could easily use an off-set smoker and enjoy some smokey flavor in each bite.
On a veggie tray specifically for a grill, grill the mushrooms, sliced bell pepper, diced pablano peppers, two halves of jalapeno.
Lightly coat shrimp with your favorite herb mixture, we used Mrs. Dash. Then place shrimp on skewers, and grill for 2-4 minutes on each side, until pink and 145 degrees Fahrenheit.
Assemble your quesadilla how you like, we placed spinach leaves down, then topped with grilled veggies, scallions, diced jalapeno, shrimp, and cheese, top second tortilla on top.
This is the tricky part, with a very large spatula, or two large spatulas, place quesadilla on grill for about 4 minutes, or until cheese is melting and tortilla is crisp. Then extra careful, put a plate on top of quesadilla, place a spatula under quesadilla and flip onto plate, then slide uncooked portion onto grill and grill for another 4 minutes or so, until tortilla is crisp and cheese is melted.
Top with salsa, or guacamole, or plain Greek yogurt....or all three! Enjoy!
Hubby and I took a bite, stopped and looked at each, then gave each other a high-five! This was one of our favorite grilled dishes yet, and we have grilled a lot of lovely treats.
