Shoo-Fly Muffins (+ a fun Audiobook #Giveaway from Tanya Eby!)

“Shoo-Fly don’t bother me, Shoo-Fly don’t bother me!”

Who remembers singing this song when you were a kid?  Now I am trying to remember how the song goes….  Well this recipe has WAY too fun of a name, and is a fun Southern treat.  The recipe has been adapted from Bobby Flay’s Shoo-Fly Muffin recipe he shared on Cooking Channel.

Shoo-Fly muffins were inspired by the original Southern dessert called Shoofly pie.  The name is thought to come from the fact that it is a molasses-based dessert, and the sweet molasses would attract flies….then you would have to “shoo” them away.

Shoo-Fly Muffins

The best part of my travels each day would be fun treats next to me, and a new audiobook adventure blaring through my speakers.  It is definitely fun to have easy treats to travel with.  This muffin does not require butter, jam, or honey, just devour the little muffin as it is!  Bobby Flay did put a crumble on his, but when traveling crumble is not very effective.

Now what audiobook adventure should I go on each week is always the question asked before my work week starts.  My most favorite is romance, but I do love a good mystery every once in awhile.

People will ask me if I know a song on the radio.  My answer is always no, but I can tell you about the new books that were just released, or most popular books out there.  Yeah I am an audiobook addict for sure!  With my audiobook addiction, I also have favorite narrators for each book.  The narrator to an audiobook is the most important part, if they do not read the book well, you don’t feel a part of that adventure.  I have three favorite narrators, Scott Brick, Jim Frangione, and the lovely Tanya Eby!

Shoo-Fly Muffins

This week I am excited to have a fun audiobook giveaway of Tanya Eby’s book “Blunder Woman.”  The book made me laugh so hard I had tears, and even made me cover my mouth in surprise.  Tanya shares a story about Chloe Knaggs, also known as Blunder Woman.  Chloe says it like it is, she is funny and real……in a truly awkward way.

2 cups all-purpose flour
1/4 tsp salt
1 tsp baking soda
1/8 tsp ground nutmeg
1/8 tsp ground ginger
1/4 tsp cinnamon
6 Tbsp cold unsalted butter, diced
1/2 cup chopped toasted pecans
1 cup light brown sugar
1/2 cup molasses
2 Tbsp canola oil
1 tsp vanilla extract
1 cup boiling water

Preheat oven to 350 degrees fahrenheit. Spray muffin pan with cooking spray and sit aside.

In small sauce pot on medium heat, toast chopped pecans for 3-5 minutes.

In medium bowl, mix together flour, salt, baking soda, cinnamom, ginger, nutmeg, and toasted pecans. Add in diced cold butter and break up butter with a pastry cutter, or your hands. You want the butter broke up, and the flour with small crumbles from the butter incorporated.

In medium bowl, mix together sugar, molasses, oil, vanilla extract. Then slowly add in boiling water into sugar mixture, mix until sugar dissolves and incorporated.

Next add in dry ingredients into the wet ingredients and mix carefully, do not over mix the batter.

Bake the muffins in a standard muffin pan for 15-20 minutes depending on oven.

What a perfect way to enjoy a sweet recipe, while listening to a funny, sweet book!!

First of all I just want to tell you taught me something new today. Shoo-fly, how fun and go figure! :) Love the name and the back story. Now to the audio books I always wished to get into it but never did. They are so expensive. I love that you are such an addict and formed on opinions who are your favorite narrators. I would say 'that's rad' if I was a hipster but I am not. :)

I have never heard of shoo-fly muffins but whatever helps to keep them at bay. I agree with Angie that with the molasses they do sound like something we should be baking at Christmas (which is when we in Oz have an issue with flies!) xx

Never heard of Shoofly muffins or pie before, but now I have to try some! These sound so good, Terra!
  • Oh yes - I do remember shoo-fly don't bother me... :) what a fun song and I have always lover Shoo-fly pie. You know what that means? How could I not love this muffins!?! They look quite irresistible. O.K. I have to admit that when driving, I'd much rather sing along than listen to a book. I've tried audio books a couple of times, but always ended up falling asleep after a few minutes OR in the case in which I was driving - got sleepy and had to play some Black Keys to wake up. :)
  • I had shoo-fly pie once and it was awful and I've never tried it again. It never dawned on me at the time that maybe the restaurant just made a crap pie. I'm going to give these muffins a try. :)

What a fun idea! It's been years since I've seen a shoo-fly pie, but I remember loving the spices in it.
