Mom’s Bacon and Hash Brown Egg Bake (+ last round of Michigan pictures)

More pictures of our trip to Michigan?  Heck yeah!  We saved the best for last….okay maybe not, but they are fun!  If you missed some of my other Michigan pictures, here is the first round of pictures, and here is the second round of pictures.

This recipe is not mine at all, but I did happily devour this lovely treat!  My mother-in-law had this egg bake ready for breakfast when we arrived at their house.  It was a full meal all in one dish.  A perfect dish for people that travel in a motorhome, or people looking for quick and easy dinners.  You can prepare this dish in advance, and then heat it up right before dinner time.

Bacon and Hash Brown Egg Bake

1/2 package (12 oz) bacon, cut into 1/2 inch pieces (can use turkey bacon)
1/4 cup vegetable oil
4 cups Ore Ida Country Style hash browns
1 package (10 oz) frozen chopped broccoli, thawed
1 cup chopped onion
1 cup chopped red bell pepper
8 eggs
1 cup evaporated milk
1/2 tsp salt
1-1/2 cups shredded sharp cheddar cheese


Preheat oven to 350 degrees Fahrenheit. Coat 13x9 baking dish with nonstick

cooking spray.

In large skillet over medium heat, cook bacon till crispy, stirring occasionally.

Heat oil in another large skillet over medium high heat. Cook

hash browns for 2 minutes on each side. Add vegetables and cook for an additional 3-4 minutes. Transfer evenly into baking dish.

In a medium bowl, whisk together eggs, milk and salt. Stir in cheese and cooked bacon. Pour evenly over potato mixture.

Bake uncovered 40 to 45 minutes or until eggs are set.


TIP: to save time, prepare casserole ahead of time, cover, refrigerate until ready to bake.


While we were at my hubby’s parents house, we took a trip to the Henry Ford Museum in Dearborn, Michigan.  It had been years since hubby and I had taken a trip there.  I believe I was still in my teens the last time I went to the lovely museum.

Now here are some pictures of a unique place in Clare, Michigan!  There was a doughnut shop that almost closed down, but was eventually bought by the Clare Cops.  So behold, the most unique doughnut shop!!!

Seriously, this is brilliant right?  We all had so much fun…..and we might have made this day a splurge day!!!  The place has a crazy long line, and is always busy…AND the doughnuts are AMAZING!  Hubby had a doughnut that felt like it weighed a ton, and was FULL of chocolate love!  Plus, check out the other unique finds!  Finally I got to try a Cronut (croissant + doughnut in one)…..AND O.M.G. it was freakin’ delicious!!!

Yup, my Michigan trip was full of laughs, and good eats!  My family is precious, and my niece is the light in our eyes!  I hope you have enjoyed the trip right along with me 🙂
