Drunken Pineapple Cocktail

So what happens when your planned post is put on hold?  You make a cocktail of course!!!!  What cocktail?  Welllllll…..that is the tricky part….or is it….???

Several weeks ago I soaked pineapple in vodka, tequila, and rum.  Apparently pineapple and watermelon are the perfect fruit to soak in any alcohol.  However, I noticed one of the restaurants I was inspecting was soaking berries in vodka.  They said blackberries, raspberries, and blueberries soaked in alcohol is sooooo delicious!

Now I do have plans for the pineapple in rum, so stay tuned.  I promise you will not be disappointed!

Today, I decided it was time to pull out the pineapple in the vodka and enjoy a few pieces…..maybe more!  When you soak the pineapple in any alcohol, be ready to give your keys up at the door.  No need for a shot glass, just grab a jar and eat some pineapple.

To soak the pineapple, just slice to the size you want.  Add the sliced pineapple to a jar with a good seal.  Then  fill the jar above the pineapple with alcohol of your choice.  Let it soak for at least two weeks.  My pineapple has been soaking for almost two months, which makes it even better.  It is okay to store the jar at room temperature in a dark, cool place.  This food safety lady promises it is definitely okay to keep the jar at room temp and not in a refrigerator.

Drunken Pineapple Cocktail

This drink is very refreshing, AND there is a little treat with every sip! The pineapple compliments the drink perfectly!

1 Tbsp of pineapple soaked in vodka, finely diced
Spumante Sparkling Wine pre-chilled
1 Tbsp Creme de Cassi


In a Champagne glass - add the finely diced pineapple, add the sparkling wine until flute is 3/4 full, then top with Creme de Cassi.

    I knew that I should have picked up that package of a dozen canning jars on sale at my grocery store cause I have most of a bottle of tequila that can be put to use in making some boozy fruit. And a bottle of some home made moonshine from my dad. :)
