Pumpkin Pie Martini – #CocktailHour

So is it possible that you have even a teeny tiny slice of your Thanksgiving pumpkin pie stashed away?  This may sound like a silly question, but just stick with me here!  Now if your loved one stole that last piece of pie, save this delicious recipe for the holidays, there is more pie I can assure you of that!

Pumpkin Pie Martini - #CocktailHour

This blogger who loves to cook, bake and well enjoy a cocktail now and then.  Guess what I have in my house?  A bar!  Yup, seriously!  There is a rack above this cocktail to hold all my wine glasses, a sink, cabinet, shelf, and we bought a few stools to make it perfect!  A few weeks ago I cleaned up the bar, and decided it would a perfect place to take my photos of my cocktails!  Having a bar….in my house….just ROCKS!!

Adjust the flavors, and amount of liquor in the recipe to your taste.  Everyone has a different taste for alcohol.  My in-laws, and sweet hubby devoured the cocktail.  So I guess it is officially family approved!!!

Ingredients

2 oz (1 shot) pumpkin pie soaked vodka (recipe below)
4 oz (2 shot) Sabroso Licor de Cafe (coffee liquor)
2 oz (1 shot) simple syrup (recipe below)
2 oz (1 shot) Grey Goose vodka

Instructions

In small container with lid, add a piece of pie and cover with vodka. Let sit for six hours, (or overnight if you can wait that long.)

To strain pumpkin pie soaked vodka, use a strainer over a bowl, with a rubber spatula carefully strain the pie and vodka, (you want the thick strained pumpkin pie for your cocktail.)

In small sauce pan, over medium heat, heat together 1/2 cup water with a 1/2 cup sugar, cook together until sugar dissolves, let cook for about two minutes. Let cool.

In beverage shaker or enclosed container filled with ice, mix together pumpkin pie soaked vodka, Sabroso Licor de Cafe, simple syrup, and vodka.

Pour into glasses and enjoy!
