Pumpkin Pie & Cranberry Sauce Sweet Bread – #Holiday #Leftovers

Trying to focus and write a post for you all….or as I love to say, ya’ll!!!  Ooooohhhhh, what is on tv tonight?  Focus, focus, focus….

Okay let’s be real, focusing and writing…..ya, it is just not happening.  I have always considered my blog my journal.  I love sharing a little about myself, along with sharing my passion.  This week I struggled with baking something for you, but I didn’t want to leave you hanging.

Since this week was fast paced with work and personal things.  I will keep my post short and sweet……with a little booze mixed in of course!  This recipe will be perfect to save for when you have loads of holiday leftovers in a few weeks!

1 slice of pumpkin pie from 9 inch pie (about 1 cup pumpkin purée)
2 eggs
2 cups sugar
1/2 cup orange liquor (or use extra virgin olive oil)
1 tsp bourbon vanilla extract
1 cup cranberry sauce (or fresh cranberries)
1 tsp baking soda
2 tsp baking powder
1 tsp salt
2 cups all purpose flour
1/2 tsp Divine Dessert Spice (or use cinnamon)

Preheat oven to 350 degrees F. In large bread pan, butter the sides and bottom of pan, then lightly coat with flour, tap off excess flour, sit aside.

In large mixing bowl - Mix together pumpkin pie, cranberry sauce, sugar, eggs, orange liquor, and bourbon vanilla extract.

In small bowl - Add flour, baking soda, baking powder, salt, and Divine Dessert spice.

Mix together wet and dry ingredients. Pour into greased bread pan. Bake for about 1 hour depending on oven. Let cool.

(It took over an hour to bake my bread. To shorten your baking time you could use mini bread loaf pans, or muffin pans.)

Pumpkin Pie & Cranberry Sauce Sweet Bread - #Holiday #Leftovers

I promise to be more focused soon.  The reason for my inability to focus was because my family lost someone special last weekend.  My Grandfather was a special part of my life growing up.  My Sissy and I have so many memories, many of them have made me giggle.  I love thinking about the happy memories, and celebrating my Grandfathers beautiful life!

While I am away for a few days with my family.  My dear virtual friend, and fellow yogi will be stopping by with a fun sweet treat.  She will be keeping the seats warm at Cafe Terra!  She may even share cute pics of her beautiful daughter…..they always make me smile!

Celebrating My Grandpa

 Happiness is Family!

Oh I am so sorry about your loss and it must be doubly hard at the holidays when families come together. Don't lose touch with the good memories and the happy times, it is what keeps him alive. The loaf is fabulous and what a great idea to use leftovers though I am tempted to make one from scratch. I adore pumpkin bread and love quick breads with cranberries... and orange liqueur. Wonderful. Happy holidays to you and yours and thinking of you xo

Ooh this looks like such a great coffee cake which reminds me I've got fresh cranberries and leftover butternut squash I can substitute for the pumpkin, no? :)
    • You could totally use butternut squash instead of pumpkin! I love how versatile recipes can be, it is the fun part of baking/cooking! Hugs, Terra
