Irish Coffee Blondies #RecipeRedux

This recipe should also be called “my snack stack of happiness!”  The blondies are almost sugar-free, and include very little fat……BUT they are packed full of flavor.  These bars are a coffee lovers dream, and a bourbon lovers best friend.  Irish Coffee Blondies will satisfy your sweet tooth, AND encourage you to reach for that second serving!

After enjoying many posts from the Recipe Redux group, I am excited to officially be a part of the action.  This is my first post of many with the lovely group!  This month the group theme celebrated St. Patty’s Day.  Who says we can only celebrate St. Patty’s Day on the 17th right?

Now this may not be a stack of burgers or veggies, but for a girl that needs healthy snacks while traveling…….this really is a stack of happiness.  Since I eat every two to three hours to help my blood sugar, these blondies provide that perfect pick-me-up for your mid-day snack!

The original recipe comes from Martha Stewart’s Irish Coffee Bars, and has fat in the recipe that will cover you for a week.  Hubby and I devoured the recipe a few years ago when my friend made them for a gathering.  For the altered variation, you will have a balanced snack that includes fat, protein, carbs, nutrients……AND booze!!!  They are also moist, packed with coffee love, and exclude the sugar glaze on top.

1/2 cup (1 stick) unsalted butter, melted and cooled
1/2 cup Irish Whiskey
1 cup palm sugar
1/2 cup applesauce (unsweetened)
1/4 cup raw agave nectar
3 Tbsp fresh ground coffee
1 egg
1/2 cup plain Greek yogurt
1 tsp almond extract
1 cup whole wheat flour
1 cup almond flour
1 tsp baking powder
1/4 tsp baking soda
Pinch of salt
1/2 cup sliced almonds


Preheat oven to 350 degrees F. Spray 9 x 13 inch square pan with cooking spray.

In medium bowl, mix together melted butter, whiskey, palm sugar, applesauce, agave nectar, ground coffee, egg, Greek yogurt, and almond extract.

In small bowl, mix together wheat flour, almond flour, baking powder, baking soda and salt.

Mix wet and dry ingredients together well, and pour into prepared pan. Top batter with sliced almonds. Bake for 20-25 minutes depending on oven.

    St. Patty's Day is one of those things that can be celebrated at almost any time of the year, IMO. It's always time for Guinness! And I'll never say no to Irish whiskey, so I couldn't possibly say no to these. Good stuff -- thanks.
