Raspberry Almond Chia Pudding

Healthy snacks may sound boring to you?  So let’s just say delicious snack time, that sounds SO much better right?  This snack will take less than thirty minutes to prepare, from start to the time it is ready to be devoured.  I am impatient, kids are impatient, so a quick snack that is still delicious….WINNER!  This recipe is easy to alter to your liking.  You can use your favorite fruit, and milk of choice.  Instead of almond extract, you can use vanilla extract.  Time to enjoy some Raspberry Almond Chia Pudding!!!

Raspberry Almond Chia Pudding

There are so many positive benefits to including Chia seeds to your diet daily.  Here is a link from MindBodyGreen to share some of the many benefits of Chia seeds.  With all the fabulous benefits that Chia seeds have to offer, it is fun to find ways to incorporate them into your recipes.  I love adding Chia seeds to my overnight oats, smoothies, salads, and baked treats.  In the future I may need to add Chia seeds to our marinades and BBQ sauces.  Here is a helpful link that shares how to substitute eggs with Chia seeds for your baked treats.

Raspberry Almond Chia PuddingNot only is this snack easy to make, it only has five ingredients.  Four of the ingredients are items that are usually found in your pantry.  Easy, and accessible….BONUS!

Raspberry Almond Chia Pudding

Raspberry Almond Chia Pudding

Ingredients


For Pudding:
1 cup unsweetened almond milk
1/3 cup Chia seeds
2 tsp almond extract

For Raspberry Puree:
One 6 oz container of fresh raspberries
3 Tbsp coconut sugar (palm sugar)

Instructions

No baking required. Use two 8 oz. glasses, or favorite containers.
For Pudding:

In small bowl - mix together Chia seeds, almond milk, and almond extract. Add half of the ingredients to each 8 oz serving bowl, or your favorite individual container.

Place individual containers in the refrigerator to thicken, stir frequently because the Chia seeds will thicken quickly.
For Raspberry Puree:

In food processor or blender - puree raspberries and coconut sugar together. Hold back a few whole raspberries to top on snack.

Top almond Chia pudding with raspberry puree.

Optional - you could mix some of the raspberry puree in the almond pudding, and then top with the raspberry puree.
