Blueberry Orange Cobbler

This cobbler has blueberries exploding out of every area of the dessert.  To add another dimension to the flavor of this treat, add some orange love.  Each bite will invade your senses with the floral scent of oranges.  Blueberries and orange make a perfect flavor combination, and have you going back for seconds.  Time to devour some Blueberry Orange Cobbler!

Is this a cobbler or a crisp, that is the question?  It is definitely a cobbler, and full of fruit love!  A cobbler shares the pan with 50% fruit, and 50% of a cake type batter.  This dessert is also a common Southern treat.  The best part, you can use any fruit that is in season.

Blueberry Orange CobblerI have shared my love for local honey, especially Cloister Honey.  They have so many different flavors they have infused into the honey.  Remember the Bourbon Honey I shared with Bourbon Bread Pudding?  Or how about the Cinnamon Whipped Honey I shared with my Cinnamon Cherry Breakfast Muffins?  There are more flavors I will be sharing, such as lavender, vanilla, ghost pepper, cocoa, and even lemon.  For this recipe I used orange blossom honey instead of using a large amount of refined sugar.  The orange blossom honey added a gorgeous floral flavor to each bite.

Blueberry Orange CobblerThis dessert is hubby approved!  It is also an easy recipe to make.  A perfect treat if you have tons of blueberries after your trip at the blueberry patch!  If you want it to be more traditional and with the sugar love.  Just exclude the honey and use one cup of sugar.

Ingredients

1 cup all-purpose flour
1 tsp cinnamon
1/4 tsp nutmeg
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup butter, melted (I used salted, you could use salted or unsalted.)
1/2 cup orange blossom Cloister Honey
1/2 cup almond milk
Zest of medium orange
Juice of one medium orange (1/4 to 1/2 cup)
1/4 cup brown sugar
3 cups fresh blueberries

Instructions

Preheat oven to 350 degrees F. Spray cooking spray on 9 x 9 inch pan or casserole dish.

Melt butter in sauce pan, take pan off heat and mix honey with warm butter.

In pan or casserole dish, add melted butter and honey, mix in juice and zest of orange, almond milk, brown sugar.

In small bowl, mix together flour, cinnamon, nutmeg, baking powder, salt.

Slowly whisk in dry ingredients into the wet ingredients. Add blueberries.

Bake for 40 to 45 minutes depending on oven.
