Blueberry Lemon Banana Bites #RecipeRedux

The last few weeks this blog has been sharing some serious blueberry love. For this post, how does blueberry and banana sound together? The combination of tart blueberries with the sweet bananas is a perfect balance of flavor. This snack is a modification from my Banana Bread with Greek Yogurt recipe. The major change to the recipe is the exclusion of refined sugar. Instead, the sweetness in the bites is from fresh fruit and honey. Since kids are back to school, we are sharing healthy recipes that are easy to pack in their lunch box and would also be perfect for an afternoon snack when they arrive home from school. Let’s not forget the adults though, each recipe will be perfect for anyone young or older. Especially people like myself who travel for their job, it is nice packing snacks to keep your energy strong throughout the day. This recipe is easy to make and is also a perfect recipe to throw together on your crazy busy week. Blueberry Lemon Banana Bites I have been sharing about Cloister Honey a lot lately. They provided me with several different flavors to work with. I have been having fun using the flavors in recipes instead of using refined sugar. For this recipe, adding Lemon Whipped Honey gave the Blueberry Bites a perfect balance of flavor. Here are a couple recipes using Cloister Honey: Blueberry Orange Cobbler, I used their Orange Blossom honey. Cherry Bourbon Crumble Bars, I used their Bourbon honey. Blueberry Lemon Banana Bites

1 cup blueberries
1/2 cup unsalted butter
1/2 cup lemon whipped honey
2 large bananas, mashed
1 egg
1/2 cup plain Greek yogurt
2 cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 tsp nutmeg


Preheat oven to 350 degrees F. Spray mini muffin pans with cooking spray.

In small sauce pan, on medium heat, cook together blueberries, butter, and honey, mash the blueberries. Let cool, (you can cool in refrigerator, in the freezer, or place a bag of ice in mixture, and stir mixture to cool all areas quicker.)

In medium bowl, mix together bananas, egg, Greek yogurt, cooled Blueberry, butter, and honey mixture.

In small bowl, mix together flour, baking powder, baking soda, salt, and nutmeg.

Mix wet and dry ingredients.

Fill mini muffin 3/4 full.

Bake for 12-15 minutes, depending on oven. Will make about 36-40 blueberry bites.
