Time to share some Fall recipes! That means lots of pumpkin and apple love coming your way! This little bite of pumpkin happiness is wonderful all on its own. Adding chocolate provides a better bite, and another layer of flavor. Let’s enjoy a few of these Flourless Six-Ingredient Pumpkin Cookies together.
This cookie is also multi-functional. Can a cookie really be multi-functional? Yes indeed! Not only is the cookie delicious if you’re just grabbing a few from the cookie jar. You could break-up a couple cookies and add them to your morning oatmeal. Or, are you a smoothie lover? Throw a couple of the pumpkin cookies in your morning smoothie. This cookie is perfect for a pre or post work-out snack and I love that it is diabetic friendly- a delicious little treat to keep your blood sugar levels happy. For the cookie: I used organic brown sugar, and only a small amount.

Two hours before you make cookies, place cheesecloth or paper towel in a strainer, add pumpkin, then let sit to strain excess water from pumpkin
Preheat oven to 350 degrees F. Spray cookie sheet with cooking spray.
In medium bowl - add all six ingredients, strained pumpkin, brown sugar, oats, pumpkin spice, chocolate pieces, and vanilla extract.
Place one tablespoon of batter for each cookie on greased cookie sheet. Bake for 8-10 minutes depending on oven, or until golden brown on bottom of cookie.
