This cookie is perfect for a pre or post work-out snack and I love that it is diabetic friendly- a delicious little treat to keep your blood sugar levels happy. For the cookie: I used organic brown sugar, and only a small amount.

15 oz can of 100% Pumpkin
1/2 cup organic brown sugar
1 cup gluten free old fashioned oats
1 tsp pumpkin spice
1/2 cup semi sweet chocolate pieces
1 tsp vanilla extract


Two hours before you make cookies, place cheesecloth or paper towel in a strainer, add pumpkin, then let sit to strain excess water from pumpkin

Preheat oven to 350 degrees F. Spray cookie sheet with cooking spray.

In medium bowl - add all six ingredients, strained pumpkin, brown sugar, oats, pumpkin spice, chocolate pieces, and vanilla extract.

Place one tablespoon of batter for each cookie on greased cookie sheet. Bake for 8-10 minutes depending on oven, or until golden brown on bottom of cookie.
