Apple & Sausage Sauerkraut

Let’s take a trip down Savory Street for this post. My mother-in-law made this a few years ago for a holiday dinner. This recipe is not your traditional sauerkraut for sure. A one-pot dish that includes meat, potatoes, fruit, vegetables, and fat from the oil. A very hearty dish that is easy to make. Time to serve-up a big bowl of Apple & Sausage Sauerkraut!

This month I wanted to only share apple and squash recipes. My Pinterest feed is flooded with mostly sweet treats that include apple and squash.  I plan to share a few savory recipe ideas, along with a few sweet treats.

Apple & Sausage Sauerkraut

You know how people say your taste buds change as you age? They are definitely correct. Growing up, I really disliked sauerkraut- the smell, and the taste was not pleasant. Well I am happy to say that I enjoy sauerkraut, especially a delicious Polish sauerkraut recipe! This recipe is not necessarily a Polish recipe, just a few recipes combined. The recipe credit goes to my mother-in-law.

Apple & Sausage Sauerkraut

Since I love apples and squash, it is fun sharing recipes with these ingredients this month. Did you see my Bourbon Butternut Squash Olive Oil Cake? It is full of serious bourbon love. Since I love bourbon, maybe an apple bourbon recipe needs to happen!

Apple & Sausage Sauerkraut

Apple & Sausage Sauerkraut

Save Recipe

Ingredients

8 oz kielbasa, cut into chunks
12 oz red potatoes, cut into cubes
2 cups shredded carrots
16 oz sauerkraut, rinsed and drained
2 golden delicious apples, peeled, cored, and cut into cubes
1 medium yellow onion, diced
2 Tbsp olive oil
Salt and pepper to taste

Instructions

Large pan, medium-high heat, sauté onion in olive oil until translucent.

Add apples, carrots, and sauerkraut, mix well.

Next add sausage, and red potatoes, mix well.

Add 1/2 cup water and bring to boil, add more water if needed.

Reduce heat, cover and simmer for 20-25 minutes, or until potatoes are tender.
