Farmers Market Herbed Potato Salad #HotSummerEats

Oh my word, I’m so sorry it has been so quiet over here.  A few weeks back I had to go to Michigan, I will share more on that later.  Then, the last couple weeks I have been writing like crazy to finish my third romance book.  Well, I’m happy to say, my book is officially in the edit phase.  For the next couple months I will be working on recipe developing, for nine recipes that will be included in the book.  YUM!

This recipe is easily interchangeable- just throw in the vegetables you picked up at the farmers market.  If you have a fun mix of herbs growing in your garden, get wild and crazy, just mix and match the herbs.  The title says farmers market, so that means, anything goes!  Okay, are you ready for some fun?  I have teamed up with a great group of bloggers, and we will be sharing some fabulous recipes perfect for Summer.

Farmers Market Herbed Potato Salad

Ingredients

1 parsnip, cubed and boiled
1 medium yam, cubed and boiled
8 red potatoes, cubed and boiled
2 large hard boiled eggs, diced
3 Tbsp fresh herds, diced finely (I used basil, globe basil, oregano, and rosemary)
1 medium poblano pepper, diced
25 grape tomatoes (1 1/2 cup,) quartered
1 1/2 tsp dried onion flakes (or 1/4 cup onion, diced)
1/4 cup Voodoo Southern Gold Sauce
1 cup mayonnaise
1 Tbsp Gourmet Garden red pepper flakes
Salt and pepper to taste

Instructions

In medium stock pot, boil cubed yam, red potato, and parsnip. Let cool completely.

In small stock pot, place eggs in water and bring water to boil, let boil for 12 minutes. Run cold water over eggs to cool, then remove shells and chill in refrigerator.

In medium bowl, add root vegetables, eggs, herbs, poblano pepper, dried onion flakes, grape tomatoes, and red pepper flakes, mix well. Mix together Southern Gold Voodoo Sauce and mayonnaise, then add to potato salad, add salt and pepper to taste. Let marinate together over night, or for at least a few hours.
