Oh my word, I’m so sorry it has been so quiet over here. A few weeks back I had to go to Michigan, I will share more on that later. In medium stock pot, boil cubed yam, red potato, and parsnip. Let cool completely.
In small stock pot, place eggs in water and bring water to boil, let boil for 12 minutes. Run cold water over eggs to cool, then remove shells and chill in refrigerator.
In medium bowl, add root vegetables, eggs, herbs, poblano pepper, dried onion flakes, grape tomatoes, and red pepper flakes, mix well. Mix together Southern Gold Voodoo Sauce and mayonnaise, then add to potato salad, add salt and pepper to taste. Let marinate together over night, or for at least a few hours.
