It’s an ice cream social kind of post today ya’ll! Now tell me, you love bourbon, you love ice cream, and you love cookies, right? Perfect! Today, I’m excited to share some ice cream that is at our grocery stores here in North Carolina. The delicious Graeter’s ice cream, . They asked me to share their creamy treat, and then I got excited about creating a recipe for them. The cookies I complimented with the ice cream work perfectly. There are bourbon-soaked cherries in the cookies, and the ice cream is bourbon pecan chocolate chip. So much bourbon-ice cream love! This treat will awaken your tastebuds, and make you beg for more! Who wants a Bourbon Cherry Chocolate Chip Ice Cream Sandwich?
Graeter’s ice cream is amazing! Okay, it’s ice cream, so of course it’s delicious. Here’s what makes this treat different from all the rest- the flavors. Check out some of these flavors, Madagascar Bourbon Vanilla Bean, Bourbon Pecan Chocolate Chip, Buckeye Blitz, Peanut Butter Chocolate Chip, Black Raspberry Chocolate Chip… and so much more.
Graeter’s ice cream was first introduced in 1869 in Cincinnati, Ohio, and was sold at street markets. By the 1920’s it was so popular they were opening ice cream parlors in several areas of Cincinnati. Then in the 1980’s they started expanding to other cities, and were eventually sold exclusively in Kroger stores coast to coast. From their website: “Graeter’s is now the only commercial ice cream manufacturer anywhere in the world to use French Pot freezers, and its two-gallon batches are the smallest in the industry.” There is so much history to be shared with this company, and a whole lot of love that goes into every pint.
You all know I love making desserts, and of course love eating them, too! This recipe had me stopping after every bite and savoring the moment. The bourbon-soaked cherries were a perfect addition to the cookie, and enhanced the flavors of the dessert. So much happiness with every bite!

In small bowl, add dried cherries, and cover with bourbon, let soak for at least four hours (most of liquid will be absorbed into cherries.)
Preheat oven to 350 degrees F. Do not grease baking sheet.
In medium bowl, mix together butter, Greek yogurt, white sugar, brown sugar, vanilla extract, and egg. Mix well.
In small bowl, mix together flour, baking soda, salt, and cinnamon.
Add flour mixture to wet ingredients, add chocolate chips, and bourbon soaked cherries with excess bourbon.
Use one tablespoon or more of batter for each cookie, it depends on how big you want your ice cream sandwiches.
Bake for 8-10 minutes for smaller cookie, and 12 minutes for larger cookies. Cookies should be light brown. If you make large cookies, will yield about 4-6 ice cream sandwiches. If you have smaller cookies, will yield 8-10 ice cream sandwiches.
