Is it already time to get your kids back-to-school? Time flies when you’re having fun! Summer passed by quickly this year. During the Summer we tend to get lax and not focus on good healthy snacks. Now that you are back to the school routine, let’s get back that healthly groove! Shamrock Farms is sponsoring my post, and sharing some of their healthy midday snack options. I put a little spin on two of their recipes, so now you have more options to choose from… Perfect!
The recipes you will see adapted are their healthy s’mores, and banana rolls. With cool weather just around the corner, the banana rolls have a warm cozy feel to them now. My Banana strawberry peanut butter pockets are full of flavor, and will warm you from the inside out. The adapted version of the healthy s’mores probably should be called, “healthier s’mores.” I took all the elements of a s’more and added it to apple slices. Just a small amount of marshmallow fluff, and nutella are needed to make this recipe shine. Get your kids excited for their midday snacks with all these fun recipe options!

I love snacks. Well, who doesn’t, right? All these recipes from Shamrock Farms are pretty fantastic! I wanted to share a couple more fun healthy snack options that I have tucked away in the CafeTerraBlog vault: Almond Toasted Coconut Cookies (Gluten Free,) Apple Pie Snack Cake, Flourless Six-Ingredient Banana Oatmeal Cookies, Chocolate Covered Banana Fries, Berry Nut Butter Energy Bites.
For Strawberry Banana Peanut Butter Pockets
Preheat oven to 350 degrees F. Use un-greased sheet pan, separate cresent roll dough on pan.
Spread out 1 tsp of peanut butter on top part of cresent dough, add 1/4 tsp of honey, two slices of banana, one slice of strawberry, sprinkle with cinnamon.
Wrap long portion of dough around, and pinch all sides together to ensure the pockets are completely closed. Sprinkle with cinnamon.
Bake for 10-12 minutes, depending on oven. Let cool slightly before serving. Will hold in the refrigerator, and then rewarm in microwave.
For Healthier S'mores
One large apple (or more, will make two to three s'mores with one apple)
Core out center, Slice apple about 1/2 inch thick.
On one slice spread a thin layer of nutella, then place second slice on top.
Next, add a thin layer of marshmallow fluff on top slice, and sprinkle graham cracker crumbs on top, optional, you can can add chocolate chips or raisins.
You may need to cut this snack up for your child, it may be a little messy.
