Tomato Basil Quick Bread

Who’s excited for Fall?  I am, especially now that I have this delicious recipe.  The bread is very easy to make, and includes a perfect mix of flavors.  The tomatoes provide enough moisture to keep the bread perfect with every bite.  It would be a wonderful compliment to any cozy soup recipe, or slathered with butter of course.  Who wants a slice of some Tomato Basil Quick Bread?

I was asked to review Dei Fratelli (which means “Of the brothers,”) tomato products.  Dei Fratelli is four generations of the Hirzel family who have been growing and canning the perfect product just for you.  Since I adore tomatoes in just about anything, except my cereal of course- I was excited to share.  The tomatoes are well balanced, and provide the perfect amount of flavor.  My husband and I use canned tomatoes in just about every soup or pasta recipe, even in barbecue sauce!  So I look forward to using more of their products in the future!

Ingredients

1/2 cup (1 stick) salted butter, softened
2 eggs
15 oz can diced tomatoes (drain some of the liquid, not all.)
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp garlic powder
2 1/4 cups all purpose flour
1 Tbsp fresh basil, chopped
2 tsp dried chili pepper, chopped

Instructions

Preheat oven to 350 degrees F. Spray bread loaf pan with cooking spray.

In medium bowl, mix together butter, eggs, tomatoes, basil, chili pepper, and garlic powder.

In small bowl, mix together flour, baking powder, baking soda, and salt.

Mix together wet and dry ingredients, pour batter in prepared bread loaf pan.

Bake for 45-55 minutes, depending on oven. Check after 30 minutes with toothpick to see where you are at in cooking process.
