There are parties coming up in the future and snacks will be needed. These Samosas are beyond fun to make and are so versatile. You can pack pretty much anything into these little pockets of fun. This recipe is on the “healthier” side with all the veggies used, we especially loved the addition of spaghetti squash for extra nutrients to the recipe. If you want to really keep it healthy use a lean meat or exclude the meat all together. Using phyllo dough is a perfect addition with the crunchy exterior and then the filling provides that soft interior, delicious. Who’s ready to have a few Sausage, Spaghetti Squash & Veggie Samosas?
Someones 50th birthday is coming up- I won’t name names- but I have been married to the amazing man for almost 19 years. So, I need to have some kind of special party for him, right? Since we are snack people, this is such a perfect recipe option for any party. Of course, he believes he will be turning 49 again, let’s not tell him the truth… deal?

Prepare spaghetti squash in advance: Cut spaghetti squash in half, place on sheet pan and bake in 350 degree F oven for about one hour. Let cool. Use fork to scoop the squash out and use to make samosas, or put in container for later use.
Bring one roll of phyllo dough out of the freezer and let thaw at room temp for about 2 hours.
Preheat oven to 400 degrees F. Spray sheet pan with cooking spray and set aside.
In sauce pan, brown sausage then sit aside, in same pan, cook onions until opaque, add garlic and cook for another 30 seconds, add bell pepper and broccolini and let cook for about 2 minutes, add spaghetti squash and let all ingredients cook together. Next, add Bayou Bourbon Glaze sauce to the spaghetti squash, sausage and veggie mixture. Sit aside.
Carefully work with each piece of phyllo dough, it will break easily. Take two pieces of phyllo dough, cut in half length wise, lightly brush water on one half of the phyllo, sprinkle toasted sesame seeds, add about one tablespoon of spaghetti squash mixture, then very carefully fold over to start forming a triangle, once completely folded use water to brush down the edges and hold everything together completely. This recipe will make about 22 samosas.
Place prepared samosas on prepared cookie sheet, bake in oven for about 15-20 minutes, depending on oven, they should be a light golden brown.
