Deconstructed Smoked Chicken Chile Relleno

Football time, baby!!! Can we just express our love for football, tailgating food, and cheering it all on with friends? When Brian and I think of tailgating, wood-smoking always comes to our minds. Ribs, chicken wings, brisket burnt ends, and maybe something unique to tie it all together- YES! What’s a unique recipe that will tie all that love together? Well that’s why we decided to make a cheesy recipe that everyone could enjoy- hence the need for a Deconstructed Smoked Chicken Chile Relleno.

Basically a chile rellono is a chile filled with cheese and dredged in egg batter, and then deep fried. When we lived in Tucson I may have eaten way too many of these little pieces of heaven. For this recipe we deconstructed it to make it work perfectly for tailgating. Since you only have the grills for cooking, and wood-smoking is not done in extremely high temps, omitting the egg batter and fried portion was a must. You ready?

Deconstructed Smoked Chicken Chile Relleno
Save Recipe


4 thin chicken breasts
4 poblano peppers
4 cups cheese (we used a Mexican shredded queso)
Garlic powder


Wood-smoker- we used apple wood, but you can use whichever one you choose that goes with chicken.

Grill poblanos whole until they are charred. In medium bowl with ice and water, place the charred peppers in the water and start removing the outer skin, carefully remove the stem and seeds. Sit aside.

Wood-smoke the chicken- With the thin chicken breasts you will only need to cook them for about 15 minutes on each side (and watch them closely). Note: if you use thicker chicken breasts, you will need to at least double the time.

To assemble each element- Cut cooked chicken in cubes, dice up cooked poblano peppers, place in large cast iron skillet and mix in 2 cups cheese, add as much as you want of cumin and garlic powder. Top with remaining 2 cups of cheese. Place back in wood-smoker, cover smoker and let cook to melt cheese. Then dip chips or your fork into the cheesy treat and enjoy!

    I looooovvveee chiles rellenos, but they can be a pain to stuff and serve if you want to make a bunch. This adaptation sounds so easy and looks just as delicious, I can’t wait to try it!
