Blue Cheese Blitz Dip

Our friends were all huddled around the TV looking anxious and excited for the next play- every once in awhile someone would reach forward grab a chip and submerge it into the homemade dip. For just a split second you could see they were more excited over the food- then the next play of the game would happen and it was all eyes back on the TV screen. We did grab their attention for a few seconds though, so to us that was a win in our book. Especially since the Blue Cheese Blitz Dip is truly the perfect football snack, delicious with chips or veggies- and the best part, it’s easy to make!

We call Brian the “Dip Chef” here at Cafe Terra, and he lives up to that title beautifully. He loves mixing up new flavors and creating new concoctions with Greek yogurt, mayo, and more! This recipe was just a thought with a wee bit extra of blue cheese crumbles sitting in a container (you can’t waste it after all). You can mix up the ingredients and make it your own- have fun!

Blue Cheese Blitz Dip

Ingredients

16 oz plain 2% Greek yogurt
16 oz mayonnaise
1 pound of bacon, extra crispy
4 oz blue cheese crumble
3 whole bulbs of garlic, roasted

Instructions

Preheat oven to 375.

If you have a garlic roaster, cut off top of bulb, place in roaster, and bake for one hour. If you do not have a roaster, cut off top of bulb, and wrap bulb in foil, and place on rack, bake for one hour. Once it is ready, squeeze sides of bulb, and push out garlic. It should be very soft.

Cook bacon, make sure it is extra crispy. Once cooled, crumble pieces of bacon.

In medium bowl, mix together Greek yogurt, mayonnaise, bacon crumbles, blue cheese crumbles, and roasted garlic.

Let chill for a few hours before serving, or for best results chill overnight to let flavors come together completely.
