Red Velvet Ginger Rum Balls

Super Bowl party’s should always be equipped with boozy treats; especially for the teams that need that extra boost when down by 10 points late in the game. This recipe will satisfy a chocolate lovers craving, and calm those crazy nerves that always come with any football game. The recipe includes some serious rum love … and even keeps things a wee bit “healthier” with Greek yogurt. Warning: Just one Red Velvet Ginger Rum Ball will not be enough.

Red Velvet Ginger Rum Balls

I’m excited to be a part of the Foodie Football Fans for another round of recipes ready to make your Super Bowl party that much better. Get ready to be hungry. I chose Red Velvet Ginger Rum Balls to celebrate my football teams colors … curious which team I’m rooting for now? Okay, okay, it’s the 49ers. Yes, I know they had a tough year. Which is why they really needed a boozy treat.

Ingredients

10 oz bittersweet chocolate
1 1/2 sticks unsalted butter, cold, and cut into pieces
1 1/2 cups 2% Greek Yogurt
1/2 cup packed light brown sugar
1 tsp vanilla extract
1/2 tsp salt
Heaping 1/4 tsp ground ginger
1/4 tsp cinnamon
1 1/2 Tbsp cornstarch
2 bottles of red food coloring
3/4 cup all purpose flour
1/2 cup dark spiced rum
1 1/2 cup white sugar (for rolling balls)
6 ginger cookies, crumbled in food processor (for rolling balls)
1/2 tsp ground ginger (for rolling balls)

Instructions

Preheat oven to 350 degrees fahrenheit. Spray 9 x 13 pan with cooking spray.

In double boiler, on medium heat, melt together chocolate and butter.

In KitchenAid mixing bowl, mix together Greek yogurt, brown sugar, vanilla extract, salt, ginger, cinnamon, and cornstarch together well.

Slowly add melted chocolate to batter will mixing on low speed. Next slowly add in red food coloring, and flour.

Pour batter in greased pan, and bake for 10-15 minutes, or until toothpick shows brownies almost done, but with batter still sticking on toothpick.

When brownies are finished cooking, scoop into large bowl, and spread out evenly to cool. You can blast cool the brownies in the freezer, or refrigerator. Once cooled enough to handle, add rum, and mix well.

Grind ginger cookies in food processor, or smash well in bag, the cookies need to be in fine crumbles.

On small plate, or in small bowl, mix together white sugar, ginger cookie crumbles, and ground ginger.

Scoop half tablespoon of batter, and form into ball, roll in sugar ginger mixture.

Chill in refrigerator to firm balls for about two hours.

Keep the red velvet balls in refrigerator since you have yogurt in recipe.

Recipe yields about 45 balls depending on how big you want each ball.

You can add more rum, to make the rum flavor more intense.
