Cafe Terra Gets Healthier!

Who here can raise their hand up high and say, “2017 is off to a great start?” Yeah, for some it may be challenging … I know. Heck, it’s challenging for us, too. Did you notice how I put, Cafe Terra Gets Healthier, and not healthy? It’s all about the little changes that can become something bigger.

Healthier should also mean delicious … well, in the Cafe Terra playbook it should be.

Over the last few weeks we have tried a few new recipes, taken part in a seven day salad challenge, and amped up our walks with the dog. Little changes that work into becoming big changes overall. It all started after finally watching the movie, Forks Over Knives. We felt inspired and maybe a little adventurous. Brian and I are not vegans, but what we have discovered, the recipes in Forks Over Knives are really delicious. Plus, if you like meat, you can adjust the recipe to your need (or want).

Something to remember, the toppings can be endless. Just get creative and grab what’s in your refrigerator and cupboard. One of my new favorite toppings, prepared basmati and wild rice mixed with fire roasted tomatoes (chilled). Another new favorite, pumpkin seeds for extra added crunch, and blueberries for a hint of sweet. Plus, instead of using store bought dressing, just add salsa, lemon or lime juice, balsamic vinegar, or make your own. For one homemade dressing, I pureed avocado and lime juice, that’s it!

Have a craving for pancakes, but you want a healthier option? Give banana pancakes a try! They will satisfy your craving and fill you up. Here is the recipe from Forks Over Knives website that I tried. They are easy to make, and the only substitute I made was adding Greek yogurt instead of egg replacer.

Another new habit over here at Cafe Terra: Smoothies. They are so fun to make, and a perfect afternoon snack. To make them more filling, adding whole almonds, chia seeds, yogurt, and some almond milk will do the trick. Each smoothie seems to be different, because it depends on what is in my fridge, freezer, or cupboard.
