Grilled Cheesy Potato Packets

If you love cooking like I do, then you must have gone through using foil a lot. I remember wanting to try cooking everything in tin foil to see how it came out. Though I still do it for some things, like my white fish and vegetables. I have also decided that potatoes are one of the best ingredients to cook in foil.

All you need for this recipe is the potatoes of your choice (I prefer red potatoes), the cheese of your choice (I use Monterrey Jack or cheddar), and your grill! This is a great appetizer, side dish, and can even could be a full meal if you add a protein of your choice.

If you want to save time consider boiling your potatoes beforehand, but don’t worry if you can’t, this recipe won’t take long to cook. The good thing about this recipe is that it is easy to make. Plus, you won’t have to spend too much time preparing it, and it can be left to cook all on it’s own … No need to monitor it.

2 lb red potatoes, cut in large wedges
1 tablespoon minced garlic
¼ cup olive oil
1 teaspoon salt
1 teaspoon black pepper
5 ounces grated Monterrey Jack cheese
Fresh chives
Bunch cilantro
Optional: 1 tablespoon sour cream to garnish


Wash your potatoes thoroughly. Preheat the grill to medium-high heat. Cut your potatoes into long wedges.

Lay two large pieces of tin foil and split the potatoes between the two, 1 lb in each tin foil packet. Drizzle potatoes with olive oil, and add garlic, salt and pepper as well.

Cover each tin foil piece with another piece and fold edges well to create a sealed packet. Place the packets on the grill and grill them both for about 20 minutes. Flip them a few times to ensure that all sides cook evenly.

After 20 minutes, or when the potatoes are tender and easily pierced with a fork, remove the top foil of each packet. Sprinkle the cheese on top and return the open packet to the grill so the cheese melts a bit.

Remove the packets again, add sour cream to each packet, if you like it. To finish, garnish with chives and cilantro, and serve hot!

If you can’t use the grill, then you can make this same recipe in your toaster oven, just make sure you follow the same steps, and cook in the oven for 30-40 minutes on 425°F.

Also, when making this recipe, I use red potatoes because they are more tender and cook easier. I also suggest you use small yellow potatoes or even fingerling cut in halves if you don’t have another choice.

If you don’t want to use Monterrey Jack cheese, you can use another cheese that melts, such as Swiss. Use pepper jack cheese if you want a spicy kick to this meal, and add red pepper flakes too.

Consider adding ground beef or turkey for a more complete meal. You can even serve this as a center dish and cut the potatoes in smaller pieces so that everyone can grab a piece with a toothpick.

I particularly like potatoes, but there are some people who don’t really enjoy them as much. With this recipe though, everyone will fall in love with the melty cheese. The key to this is the potatoes and the cheese, make sure you buy the correct one, or shred your own at home.
