Garlic and Cheddar Drop Biscuits

Ingredients
  • For the Biscuits:
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • Freshly ground black pepper, to taste
  • 1 teaspoon garlic powder
  • 5 tablespoons butter, cold, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 cup grated sharp cheddar cheese
  • ½ cup 2% milk
  • For the Topping:
  • 3 tablespoons butter
  • 1/2 teaspoon garlic powder
Instructions
  1. Preheat oven to 400.
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, pepper and garlic powder.
  3. Add the chunks of butter.
  4. Using a fork, cut the butter into the flour until it is coarse, and the butter is thoroughly mixed in with the flour mixture.
  5. Pour in the oil and stir in the grated cheddar cheese and milk; mix until well combined and holds together. If it seems too dry, or if you can see raw flour, add a bit more milk – about a tablespoon at a time.
  6. Using a spoon, drop portions of the dough onto an ungreased cookie sheet. Use an ice cream scoop for larger, dinner-sized biscuits.
  7. Bake for 15 to 17 minutes, or until golden brown.
  8. In the meantime, combine butter and garlic powder in a small bowl and microwave until melted.
  9. Take out the biscuits and brush each biscuit with the garlic butter. Brush repeatedly until you have used up all the butter.
  10. Serve.
